We grow three varieties in pots on the roof of our commissary kitchen. Stalks cut the morning of service. The difference shows up in the char.

The lemongrass pork station is a custom charcoal grill welded by a fabricator in Houston. The grate height is set for maximum Maillard. It took four prototypes.

Our Story

A recipe carried
from the delta

Linh Nguyễn grew up watching her grandmother work the market stall in Vĩnh Long before sunrise. The broth pot never left the flame. By the time the first customers arrived, the kitchen already smelled like Sunday.

PhoTruck started as a single pot at a Houston farmers market in 2019. The line wrapped twice around the parking lot. We haven't stopped since.

Every dish on the truck carries a specific memory — the char on the lemongrass pork is her uncle's technique, the bánh xèo batter ratio is her mother's. The food isn't inspired by Vietnam. It is Vietnam, loaded onto a truck.
